Another day, another craving. It’s Thursday and I have to go to work. My schedule fell apart a bit, so I had some extra time in the morning. After walking Sir Buddy, I decided to try to make some “pancakes”. Again I say…I know this is specifically against Whole30 rules. I am doing this round for my own reasons. After completing multiple rounds perfectly, this round is about my lifestyle. So please see the official Whole30 website for information on the program and all of the rules.
I have made pancakes many different ways and decided to try a recipe I found online using a banana, eggs and flax seed. I mixed the batter and poured the first pancake. Too runny. Maybe the banana was too big. So I added a bit more of the flax seed. Poured another pancake. The consistency was better so I used all the batter to make four small pancakes. I took them off the griddle and spread almond butter on them and topped it with sliced strawberries.
The conclusion…the best part of these pancakes were the strawberries. It wasn’t the texture or flavor I was hoping for. Honestly the “pancakes” tasted like a banana flavored omelet. The taste of banana and the texture of an omelet. I had sent Jared a pic saying I was doing a trial run, so I sent him another message saying they weren’t up to standard so he would not be getting those for weekend breakfast.
Due to the cancellations, my day was really easy. I spent a lot of time hanging out with Buddy. I cleaned out the fridge and emptied all the garbages so I could take the garbage cans to the curbs. Today was pretty mundane, nothing exciting or out of the norm. Some days just be like that.
We did have the previously mentioned leftovers for dinner. Chicken and green beans. Nothing goes to waste here. Food is expensive. Eating healthier is even more costly. (Why is broccoli suddenly so expensive?)
After dinner I made Jared look at the Primal Kitchen website and decide what he wanted me to order. He never answered me. He just said that it all looks good. Standard man response. So I will order what I know he likes. Buffalo, Buffalo ranch, BBQ, and anything else I see that looks tasty.
