Whole30 Day 7: We Made It A Week




Another day of waking up early with Jared. I actually slept like shit last night, so I sent him out the door and immediately went back to bed, I woke up again at almost 10 a.m. Yikes. I got up and noticed how sore my body was. Maybe it was too much scrubbing and laundry folding from the day before. Whatever the reason, the fake tiger’s blood is nowhere to be found.


I was on the struggle bus trying to find the energy to accomplish anything. I forced myself to walk the dog and I day dreamed about pancakes. The thing I miss the most about my old way of eating is texture. I just want a little crunch. I tried making sweet potato “toast” the other day and it was a fail. Sweet potatoes are good, but they definitely aren’t toast.


I fell asleep in the chair multiple times. I decided that I would use leftover taco meat for taco bowls for dinner. I found the energy to chop lettuce, tomatoes, olives, onions and peppers. I decided to go the extra mile and air fry some sweet potato “chips” to give our bowl a little crunch. The taco bowl was made up of romaine lettuce, broccoli slaw, black olives, tomatoes, taco meat, avocado slices, salsa and sweet potato chips. Yum! My husband appreciated the crunch, so I was happy I powered through to do that for him.


Right now we are doing our normal nighttime routine of watching TV and laughing together. No need to be up early tomorrow, so we will most likely be up way past our bedtime.


I realize this was not an eventful day, and some days just be like that.
